Waters Crest Wine List Rose 2009 This bone dry Rosé was made by using the saignee (bleeding) method allowing only 3 hours of skin contact, producing a wine displaying a lovely light salmon color. This beautiful Rosé exhibits intense fruity flavors of strawberry, slight melon with hints of kiwi on the nose. The acidity gives the wine a light to medium finish and pairs well with shellfish, light pastas, chicken and fresh local fish. Riesling 2009 This Riesling is made in the true Alsatian style bone dry with bright vibrant acidity. The nose displays slate, shale with mineral qualities. The mouth feel has layers of wonderful fruit that hit your mid palette with great vibrancy and lasting mineral finish. This is a very limited production with only 110 cases produced. Reserve Chardonnay 2008 This uniquely complex barrel fermented Chardonnay has an unmistakable smoky burnt toast aroma. The bright acidity, lemon zest, fresh hay and vanilla are complemented by a hint of soft butter finishing round and creamy from the secondary fermentation. The grapes were hand picked from Steve Mudd's home farm in mid-October at the peak of ripeness. The wine fermented in new French oak for 7 months and was stirred on the lees for 2 months. Merlot 2006 The 2006 Merlot is a full-bodied wine with a rich, round mouth-feel enhanced by a vibrant and bright acidity. The oak is well integrated and is balanced harmoniously between the fruit characteristics and alcohol. Immediately upon swirling this Merlot in the glass, the dark roasted coffee notes are evident, with hints of spice, dark chocolate and a beautiful black cherry finish. Our winemaker suggests cellaring this wine for one to two years.
